Sour Cream Rhubarb Squares Recipe with Photo

If you this website love rhubarb, you have got to make these Sour Cream Rhubarb Squares! I was looking through my Mother’s recipe box for her rhubarb dessert that uses pineapple tidbits when I came across this recipe card, dated 1976, in my aunt’s handwriting. She passed away over 30 years ago. I don’t remember anyone ever making this dessert. I had no idea what the squares were going to look like. One word description: scrumptious! This is one rhubarb dessert that I’m going to make every year. Next time I make it, I’m going to experiment and use white sugar instead of brown sugar, and add some almond extract.

Sour Cream Rhubarb Squares

In another bowl, stir together flour, soda and salt. Beat into brown sugar mixture. Beat in sour cream. Stir in rhubarb. Spread evenly in greased and floured 9×13 inch cake pan. Sprinkle with cinnamon mixture. Bake at 350 degrees for 45 to 50 minutes.
