Low Acid Meal Plan
If you’ve read anything I’ve posted recently, you know I had to have my gallbladder removed two and half weeks ago.
While I’m sort of afraid of food right now, I’m not used to depriving myself and I get very grumpy and a tad mean when I don’t get the food satisfaction that I’m used to. In order to make my life (and the life of people who have to interact with me on a daily basis) better, last week I did a massive internet search for tasty, satisfying, low fat recipes that I could adapt to my needs. For the first time since my surgery, I’m actually excited about food again. The meal plan for this week is as follows (although we’ll actually get more distance out of these meals the overnight wonder was a hit and made enough for two days, so we’re having leftovers again tonight):
Sunday: Low Fat Vegetarian Shepherd’s Pie. This was tasty and I didn’t have any unfortunate stomach problems after eating it. I’ll definitely make it again and we had sufficient leftovers to freeze love here and eat this weekend. I’ve never actually made fish tacos, but recipes for them were all over the low fat diet websites and I’ll be darned if I didn’t get a hankering after seeing them everywhere. Unfortunately, most recipes call for a cabbage slaw and cabbage is a definite nono postgallbladder surgery, so I’m going to create my own recipe to meet my needs. If it’s good, I’ll be sure to share it.
Thursday: Low Fat, Low Acid Chicken Fajitas. I’m creating something with leftover fish taco rice and a low fat recipe I found for chicken wraps. Again, if it’s tasty, I’ll be sure to share.
